Great little food fact to kick off the day! The citrus-garlic combo in mojo is such a versatile foundation, and I've noticed how it shifts across regions like from Cuban naranja agria to Mexican lime-forward versions. The acid realy does double duty here, tenderizing while it flavors. I dunno if most home cooks realize how much that marinating time affects the final texture of teh meat.
